Long before NOA became one of Canada's best-known names in non-alcoholic cocktails, Plante had built a reputation as a chef, restaurant critic, bartender, and entrepreneur. Across each role, one idea remained constant: exceptional drinks begin with exceptional ingredients.
That philosophy first took shape in 2015, when Plante founded Monsieur Cocktail with the goal of bringing high-quality cocktail ingredients into people's homes. What began with premium cocktail syrups gradually evolved into something much more ambitious. As consumer interest in mindful drinking and alcohol-free alternatives accelerated, Plante and his team recognised an opportunity to rethink what non-alcoholic spirits could be.

The result was NOA.
Rather than attempting to imitate spirits through artificial flavouring or excessive sweetness, NOA was developed around the belief that alcohol-free cocktails should deliver the same balance, complexity, and versatility expected from traditional cocktails. The objective was not simply to remove alcohol. It was to preserve the drinking experience.
Today, the portfolio spans a range of non-alcoholic expressions inspired by classic cocktail categories, including Italian Bitter, Italian Aperitivo, Amaretto, and Italian Amaro. Each has been created to perform behind the bar as well as at home, giving bartenders and consumers the flexibility to recreate familiar serves without compromising on flavour.
At the 2024 USA Spirits Ratings, NOA earned four Silver Medals across its portfolio. The Italian Bitter received 88 points, with judges noting aromas of sweet herbs before flavours of thyme, rosemary, citrus, pine, and rhubarb that culminated in a lingering, well-balanced bitterness. The Amaretto, Italian Aperitivo, and Italian Amaro also received Silver Medals, highlighting the consistency of the range across multiple flavour profiles.

At the 2024 Bartender Spirits Awards, NOA received a Gold Medal with 92 points and was named Best Product in Canada, recognition that carries particular significance because the competition is judged by bartenders, beverage directors, and hospitality buyers who evaluate products for real-world performance behind the bar.

They reflect the growing acceptance of alcohol-free spirits within professional cocktail culture. A category once viewed primarily as an alternative for non-drinkers is increasingly being embraced by bartenders looking to create balanced low- and no-alcohol programmes without sacrificing quality or creativity.
Rather than asking consumers to choose between cocktails and abstinence, the company positions its products as tools that expand choice. The familiar rituals of aperitivo, after-dinner drinks, and classic cocktails remain intact, but with greater flexibility for changing lifestyles and occasions.
Having worked across kitchens, restaurants, bars, and food writing, he has consistently approached beverages through the lens of flavour and hospitality rather than alcohol content alone. The emphasis remains on creating drinks people genuinely want to order, serve, and share.
As alcohol-free categories continue to evolve, consumers increasingly expect products that offer complexity rather than compromise. Bartenders expect ingredients that integrate naturally into classic cocktails. Retailers look for brands that combine quality with a clear identity. NOA has sought to meet all three expectations by focusing on craftsmanship, culinary thinking, and cocktail culture rather than imitation.
In many respects, the company's evolution mirrors broader changes taking place across the drinks industry. Consumers are drinking differently, but they are not abandoning occasions, rituals, or hospitality. Instead, they are seeking greater flexibility in how they participate.
By combining his background in gastronomy with a deep understanding of cocktails, he has helped build a brand that demonstrates alcohol-free spirits no longer need to occupy the margins of the bar. They can stand confidently alongside traditional ingredients, giving bartenders and consumers new ways to enjoy familiar classics.
NOA's growing collection of international awards suggests that vision is resonating. As the category matures, the brand continues to show that removing alcohol does not mean removing craftsmanship, complexity, or the pleasure of a well-made cocktail.
